They belong to the traditional agro-food products whose methods of processing, preservation and maturation are long lasting, uniform in the whole territory, following traditional criteria for non-less than 25 years. Generally, they are products obtained through long lasting transformation and production processing, taking a dimension of high excellence. These products have a close relationship with the environment and the territory and evoke a sense of familiarity (memories and vocation of the roots in their territories).
