Born in pristine environments, among woods, streams, and high-altitude pastures. Born from great passion and long-standing traditions, which make it the protected designation of origin product with the highest production in mountain areas. Born exclusively from milk produced in that part of the Apennines running between Parma and Bologna, up to the Reno River, where speaking of agriculture, villages and hamlets, environmental protection always means speaking of Parmigiano Reggiano, its unique taste, a flavor without boundaries. Aging ranges from 24 to 30 months, available in aluminized vacuum packaging or simple transparent vacuum packaging or hand-wrapped.

Quality Project
To best enhance a product that represents a fundamental source of development for the Apennine territory and to offer additional guarantees to consumers, in 2015 the Parmigiano Reggiano Consortium defined the "QUALITY PROJECT - MOUNTAIN PRODUCT". The Project aims to characterize a product whose connection to the territory is particularly emphasized in every production phase, allowing consumers to fully appreciate the special characteristics of mountain Parmigiano Reggiano. For this very reason, the criteria for recognizing the distinctive features of the mountain product are rigorously established, extending to a qualitative selection regarding taste.


Natural Aging
To this day, we age the finest wheels of Parmigiano Reggiano in our cellars built at the end of the nineteenth century. The thick stone walls maintain a natural balance of temperature and humidity, thus achieving natural aging, during which the cheese slowly releases excess moisture and residual whey from processing, following the rhythm of the seasons. This particular microclimate allows us to oversee the aging process without using temperature control techniques, enhancing the most authentic flavors of Parmigiano Reggiano. Furthermore, this process enables us to obtain a product with a very thin rind, resulting in an intense aroma and greater yield. Our Parmigiano Reggiano has an authentic flavor, aroma, and fragrance, as per ancient tradition. In our warehouses, we age the finest selections of the Vacche Rosse, Bruna Alpina, Mountain Product, and Organic varieties.


Premium Packaging
To maintain and guarantee the product's aroma and typical characteristics, our cheeses are packaged in bags with a triple layer of aluminum. This prevents contact with light sources and consequently the problem of oxidation, while ensuring vacuum sealing, avoiding exposure of the product to thermal shock. The smooth mechanical cutting of the wheels improves the adherence of the bag to the product, preventing the formation of air pockets.
