150 Years of Tradition

Among the first exporting dairies, as early as the end of the 19th century, wheels of Cantarelli Parmigiano Reggiano traveled from Val d’Enza, the heart of the production area, to North and South America, offering the opportunity to taste a product excellent in all its aspects, rich in ancient fragrances and aromas. After 150 years, today Cantarelli 1876 is included in the register of historic brands of national interest.

From horse-drawn carriages to the Sant'Ilario d'Enza station, to the first overseas journeys at the end of the 19th century to introduce the world to true Parmigiano Reggiano.
Ours is a family adventure that has lasted for nearly 150 years, proudly recognized and certified among the Historic Enterprises of Italy.

Our most precious ingredient

Even today, we age the finest wheels of Parmigiano Reggiano in our cellars built at the end of the 19th century.
The thick stone walls maintain a natural balance of temperature and humidity, thus achieving natural maturation, during which the cheese slowly expels excess moisture and residual whey from processing, following the rhythm of the seasons.

This particular microclimate allows us to monitor the aging process without using temperature control techniques, enhancing the most authentic flavors of Parmigiano Reggiano.
Furthermore, this process allows us to obtain a product with a very thin rind, resulting in an intense aroma and a higher yield.
Our Parmigiano Reggiano has an authentic taste, aroma, and fragrance, in keeping with ancient tradition.
In our warehouses, we age the best selections of the Red Cow, Brown Cow, Mountain Product, and Organic varieties.

Modern Solutions

The use of sophisticated preservation technology ensures that the aromas and fragrances of this type of aging are preserved over time, even after cutting. In fact, the product is processed without any thermal shock, which occurs in standard packaging processes.
The type of packaging used keeps the cheese vacuum-sealed through an impenetrable aluminum barrier against light and air, allowing us to guarantee a shelf life of 2 years.
This freshness-saving packaging also allows for long-term storage in a refrigerated environment, even after opening.
