Natural Maturation
To this day, we still age the finest wheels of Parmigiano Reggiano in our cellars built at the end of the 19th century. The thick stone walls maintain a natural balance of temperature and humidity, resulting in a natural maturation process where the cheese slowly expels excess moisture and residual whey, following the rhythm of the seasons. This unique microclimate allows us to oversee the aging process without the use of temperature control techniques, enhancing the most authentic flavors of Parmigiano Reggiano. Furthermore, this process results in a product with a very thin rind, achieving an intense aroma and a higher yield. Our Parmigiano Reggiano has an authentic taste, aroma, and fragrance, in keeping with ancient tradition. In our warehouses, we age the finest selections of the Vacche Rosse and Bruna Alpina varieties, Mountain Product, and Organic.
Premium Packaging
To maintain and guarantee the product's aroma and typical characteristics, our cheeses are packed in triple-layer aluminum bags. This prevents contact with light sources and the resulting oxidation, while simultaneously ensuring a vacuum seal and protecting the product from thermal shock. The smooth mechanical cutting of the wheels improves the bag's adhesion to the product, preventing the formation of air pockets.
